They have a little sensor and a tiny computer. The sensor puts out an electrical signal voltage that increases with temperature. The computer chip converts that analog voltage signal to a digital number value. It then converts those numbers to light up the correct segments of the characters on the display and make them look like numbers. Anything else it needs to do like timing or alarming are just more jobs for the computer chip.

take example here that u want to measure liquid..use thermocouple..then these thermocouple will take the temperature of that liquid and will send that temperature to ADC (analogue to digital converter) and u will get 0 and 1 digits..then..it will send that data to the seven segments and tara!~ u will get the temperature in digital..
