Aquatic plants and regular plants are different, and have different lighting requirements. Many regular potted plants and outdoor plants can die from being overwatered, affected by the PH, or can die because they are chewed on or uprooted by the fish.
There are special aquatic plants that survive fine and even thrive in an underwater setting with hood lighting and pH fluctuations. Here is one site that I found for more information: http://www.bestfish.com/plants.html
I buy my aquatic plants from PetCo, they usually have at least one tank with plants that you can buy. My two favorite plants are aquatic bamboo, and Anacharis. :)

No - not just any plant. You will need to go with Aquatic plants for your setup.
Also - keep in mind that depending on your light's wattage you will need to decide on what plants are best suited for you wpg (Watts Per Gallon). A basic rule of thumb here is that 1wpg is low light, 2wpg is medium light, and 3+wpg is high light.
I do not know whether you plan to use CO2 or not, but you are also going to need to consider the pH factor into all of this (as it will most certainly drop if you are using CO2, and also once photosynthesis begins to take place).
You need at least 1 plant per 5g of water for it to be effectively consuming your Nitrate levels, but if your tank hasn't cycled yet (which if memory serves you are the same fella who has an Ammonia spike going on right now) I would first allow you cycle to complete, and then go from there.

some fish eat the plants, if the plants are aquatic they may work but you don't want the plant to over grow the aquarium

Most good pet shop will have aquatic plants, and no not all plants can go in an aquarium especially if you have plant eaters, some of them are poisonous and can kill you fish if ingested.

Go to PetsMart if you have one in your area, or any local pet store. They will be able to assist you in purchasing the right plants for your aquarium. We had live plants, but my gold fish kept on eating them, so I just said to heck with it. Instead we created and built a fountain aquarium...it's pretty cool.

i don't know where u live but, if u have a petsmart...on wednesdays they get thier new order of fish...plants... &they really have a great selection(snail FREE)! hope this helps...and it may not be a nitrate problem...whats happening????
