There is a rotating restaurant at one of the good hotels - if you have the budget, this is a fun way to get a good view of the city. You could sit in the gallery of the House of Commons for a debate (try to go for PM's questions) or take a tour of parliament. You could also tour the governor general's home, Rideau Hall, and see the National Art Gallery and Museum of Civilization in Hull, Quebec.

You only have one day in Ottawa??? Whoa, not nearly enough time. But some suggestions:
Visit one of the museums. I enjoyed the M. of Civilization and Science / Tech, but the National Art Gallery, M. of Nature, M. of War are all good choices. Try to go to one of them.
Parliment Hill and the tour of the building is worth it. The architecture is really neat and I found it all very interesting. Plus, assuming they are still doing it, the laser light show is supposed to rock.
For food and an unique experience, I say hit Byward Market (aka "The Market") There are a ton of good restaurants, pubs, etc and the outdoor market is a lot of fun.
This is just a slice of Ottawa, but at least it's all more or less within walking distance.

Was there last week.....try to fit in a tour of the Parliament Buildings. Very interesting. There is also the National Art Gallery and don't forget the National War Museum. My niece & I were very impressed with that.
If you are there in the evening, at 9 & 10 PM each night they have a video presentation right on the side of the Parliament Buildings Centre block. It is quiet the light show and a very interesting condensed histroy of Canada.
Enjoy!
