Because the monster wanted Jack and if Jack left with Elizabeth and the rest of the crew, they would all be in danger so for their safety she handcuffed Jack to the ship so that they may escape and the monster can get what it wanted, which was Jack......

Because the monster thingy was after jack and not the others so if he was on his own he would be the only one to go...cheery

Because the kraken was after Jack Sparrow and not after the ship...So if Jack would go with them they would all die because the kraken would go after Jack and not after the ship.
