Because it makes people smile.
It was probably something some photographer said and it cought on.
I guess that it sounds a bit cheesey now :)
I've noticed that Japanese people count to three before taking their photos

Because when we say "cheese" our mouth is like smiling !
So even when ur sad or not in the mood 4 picture taking, u just say cheese:)
U can say anything that sounds like that
Much better if it is a funny word so that everyone will have a true smile while picture taking.
Anyway u just try it infront of a mirror which word looks the best smile.
SMILE:)
Here in Japan they say "PEACE" and always not forgetting a peace sign fingers.

Just because people ask you to say cheese doesn't mean you need to say it, as long as you present a nice smile what does it matter?

when you say cheese, your mouth assumes the same position as a smile, a way of making everyone smile at the same time.

take a mirror, look at it, say "CHEESE" see ur teeth? are u seeing urself smiling in a cute way? that's a tactic used by photographer to take a better picture, instead of having his object (people) frowning... :)

Cuz you look like you are smiling. You can also mouth rubard to any song and it looks like you are singing along. Or mime elephant juice and it looks like you are saying I Love You.
It is all relative and boring.

Because it makes it look as though you're smiling. Here in Korea they say "Kimchi!" (name of traditional food but has same effect of fake smiling!)

Best group photograph I had taken - the photographer carefully setup - looked at the group and called out "Say... ****" -- we all laughed of course and it was a great photograph.!
