I am a Polish speaker and I don't know how is the person that supervises called. In Polish we use the term "pod redakcją", i.e. "under supervision".

After the first two answers I feel I should have posed the question differently. How do you call the guy who supervised the creation of the book?

Collaboration sounds about right. I just read one of those, and the editor of that one called it a round robin, I think. Each author took one chapter.

In a non-fiction book or short story collection that person is often called the editor. In science fiction sometimes different authors write stories based on one author's works and that is a called a shared universe book.
