In the metric system 1 litre of water weighs 1kg, so it's real simple. In fact the litre was originally introduced and defineds as the volume taken up by a 1 kg of water at a specific pressure and temperature.

For gallons and pounds we simply need to
- convert a gallon into liters.
- The number of liters will be the same as its weight in kilograms.
- convert kilograms into pounds

US & UK gallons are different amounts, so here are both answers.

US
---------------------
1 gallon = 3.785 litres
1 Kg = 2.205 pounds
Therefore 1 gallon of water (3.785 x 2.205)= 8.346 pounds

UK (or imperial)
--------------------
1 gallon = 4.546 litres
1 Kg = 2.205 pounds
Therefore 1 gallon of water (4.546 x 2.205) = 10.024 pounds
