Many fruits/vegetables ripen when a specific signal is produced by specific genes. Usually is a gas like ethylene or acethylene (like tomatoes). If you ship this kind of products in closed containers, and they start ripening producing such gases, the gases themselves accumulate in the container. Since both ethylene and acethylene are flammable and can explode, it is easy to understand how dangerous this could be.
