Spam email?

When spam email has a graphic or text that looks like a graphic box - if you try to copy / paste it sometimes all you get is a lot of words. Random real words that make no sense.
What's happening? How is this done and why ?

Thou shall Not Fiddle with Spam mail.
Thou should delete them immediately.
