Everyone dreams every single night - I think people have at least 5 dreams during the night.
However, remembering your dreams is another story.
I also love to dream (remember my dreams) and I also miss them when I don't remember them. I don't know why this happens. However, last night I had a very interesting dream - I mean I remembered a lot of it. I think the best thing is not to worry about it - it comes and goes and go with the flow.
Here is some advice about recalling dreams from Wikipedia that may help you - I hope so. Good luck!
Recalling dreams
According to Craig Hamilton-Parker, author of Fantasy Dreaming, many people find certain dreams extremely difficult to recall. Typically, they realize they have just awoken from a dream, but cannot remember its exact content. Since they have no recollection of what occurred in the dream, they assume that it did not actually happen. According to Henry Reed, author of Dream Medicine, a useful technique to improve dream recall is to keep a dream journal. Stephen LaBerge, author of Exploring the World of Lucid Dreaming, also suggest that you must lie perfectly still as soon as you have awaken from a dream and do not let concerns of the day occupy your mind. It is quite common to not remember much of what you have just dreamt but if you concentrate you may soon enough be able to put bits and pieces together to retrieve the entire dream.

Yes...as they say, if you can't remember doing something, no one else can make you to believe in things that you didn't do.
For you...here's some suggestions...put a notebook next to your bed, preparing to catch the trail of dream as you wake up in the morning...setting your alarm clock to wake you up a few hours earlier than usual, catch a few pages of news/books, then go to sleep again...or thinking and praying and imaging that you will catch the content of the dream tonight and that you want to be able to recall the content of the dream...sometimes, when you are doing something, you may catch the feeling that you had seen dejavu pertaining with the scenes before...that is another way your dreams are trying to reach out to you.

~do you sleep thru the night or wake up off & on?
~are you a light sleeper or a deep sleeper?
~do you go to bed exhausted or do you lay there tossing and turning?
what ever your answers - try to see what you can do/what you can come up w/ to start doing the opposite for a week, and see if that helps.
Meaning: If you toss & turn, maybe it's because you're not tired enough. This could be because of to much sugar, not enough exercise, to much on your mind... so,
~lay off the soda, candy, junk food...
~dance - really hard - to your favorite songs for 30minutes to an hour right before you take a nice long shower and go to bed...
~journal: get a new notebook and use it strickly to write down everything that's on your mind: what happend that day, what you have planned for tomorrow, what's really stressing you out... empty your mind onto the paper.
I hope these ideas help.
God bless, good night, and sweet dreams! :)

Actually, if you are sleeping properly, you shouldn't remember your dreams very often. Most people remember dreams because their sleep was interupted by something before they properly finished that stage of sleep.

We all dream, but do not remember them. If you're upset, nervous or worried you won't remember your dreams. Relax before you fall asleep, and you will remember them.

You must be sleeping hard lately. You probably are dreaming, you just don't remember them.

That's a strange complaint. You need more in your waking life to wake up to.
