Its for science and I have no idea what materials to use

You can use card board for making the head and the legs. The middle part you can try to find some flexible material to roll it around the shaft. it would be cool if the legs can move and you can also make a cell of some molding material to show how the T4 injects it's material into a host cell. You need to figure some mechanims to let the material into the host cell.

well you must know what it looks like, so I'd suggest some sort of coil for the protein coat, and pipe cleaners as the tail fibres and some sort of nut or bolt as the junction between the two. I can't think of anything that is an icosohedral shape! Thank god I never had to build such models in school!
