It seems like a bit of a convention that everyone tends to follow without much thinking about it. I've talked to some people in the service industry and yes, they don't get paid a lot and they often have to share their tips with the cooks, busboys, etc.

But in the end I tend to think the opposite of most people when it comes to tipping. If I'm in an overly expensive restaurant I don't feel obliged to give the standard 15%; because that would amount to an enormous amount.

But if I'm in an inexpensive restaurant that gives me good food for at a great price (i.e. my favourite Chinese restaurant!) I'll give a 20% or 25% tip because they've done me the ultimate service of giving me value for my money.

Edit: Yeah you are right! I didn't answer your question properly, but you know what to expect from me... The system of obligatory tipping doesn't make any sense - it should be up to you. But it's become so ingrained in the system that people now depend on it over here. I know if I leave a lousy tip in a certain non-English speaking part of the country I'll either get the "1-finger salute" or I'll not so politely be told to "never come back 'ere again!!"

When someone provides an excellent service it is good, I think to give them recognition for this. I agree that managers/owners should not have their meanness subsidised, but this only happens when tipping is conducted as standard. If it done as recognition of someone doing their job really well, then I don't think that is wrong.

Why not tip in other areas; I don't know. Few professions offer a situation similar to that of serving food. I suppose convention dictates this part
