can I trust local garden shop people to tell me how/where to get hops that will...(mate) with mine ,thus produceing whole pods? I'd like to make some home brew and when mine bloom the pods are empty, sterile.

A Yahoo search for "growing hops" (include the quotation marks in the search box) yields 11,100 results. If you do the same search, and are willing to spend a little time exploring, I'm sure that you will quickly find the information you seek.

Whats the down side to ordering them over the internet? Also, why not used pelletized hops? Do they taste different? And do you want them to mate? I was under the impression that you used the flowers not seed. I honestly don'tknow as I've only used pelletized. Been brewing for about 2 1/2 - 3 years.
