I've always dreamed (since I was little) of winning it, though the fields have changed in my mind.
Today, I imagine it to be physics, as that's my greatest passion, though it certainly won't happen--at least for a while. Life has interrupted my formal education too many times. (I haven't a single degree.)
Since going to school is the biggest dream, that's what I'd do with it, help people go to school. But of course, I can't win the prize without getting to school, so that better be where I focus my energy, eh?
I'm no longer young, and the thought that I may never really formally learn physics has crossed my mind. But then I discovered MIT open coursework! So, If I do win, I'll invite you to the ceremony for reminding me of my dream!

For bringing peace to the world. I would have been travelling the world mediating disputes with words, not fists. The prize money...I would give some to needy nations and invest in renewable energy.

Having appointed Michael Jackson as President of the United States, and Joan Rivers, Richard Simmons, Ru Paul, Gary Coleman, Dennis Rodman, and The Cable Guy, as his assistants, I would rename the Cabinet "The Laughalot Administration"
This in turn would cause a distinct increase in birth control, and more interest in aliens, and the scientific causes of DUH. More would be written about research findings and speculation, and other countries would be scared to butt into our business, for being laughed at.
I would go down in history as being the first person to be awarded in all categories: peace, economics, physics, chemistry, physiology or medicine, and literature,
As for the money...I'd be forced to build a self reliant underwater retreat

I would win the Nobel prize for Crimes to Rabbits...they are bloody everywhere in my village and we have to do everythnig possible to keep them at bay...
