Using a clean bowl (any dirt in it will stop the egg whites from getting stiff), and a hand mixer (takes too long with a whisk), beat the egg whites on high until they form peaks. When you turn off and pull out the beaters, the peaks should stay straight and not fall over.

To separate the eggs, crack the shells on a hard edge and then rock the yolk back and forth (over a bowl which is catching the whites) until most of the white is in the bowl.

You can feed the yolks to any dogs you have (cooked or uncooked) or eat them.

You use a whisk or a hand mixer to whip the egg whites until they form a stiff foam, similar to a shaving cream consistency.
