Oil and gas field workers in Wyoming and off shore. Long hours, possible hard physical and dangerous work. Maybe you would not call that a career (people do not last that long).

Careers that require a high level of education: doctor, engineer, that sort of thing. The problem is that many engineering jobs are being offshored, so it's hard to know which kind of engineering would be best. Electrical engineering has been hit hard by offshoring lately, as has mechanical engineering. Civil engineering has been hit less hard, but it also tends to pay less. Speak to someone at the engineering school of your chosen university for detailed information on future salaries.
Medicine pays well, if you have an MD. Especially if you specialize, like being an oncologist. Of course, you have to pay a fortune for the education and then you have to pay back the student loans. On top of that you have to deal with expensive insurance. Again, try contacting your chosen university and speak with someone in the medical school about which specialties pay best.

When you say entry-level, I suspect you mean "just out of college" for $50,000/yr or more salary.
For recent college grads:
Bachelors:
Computer Programmer
Mathematician/Statistician
CPA possibly
Masters:
MBA
Most really
PhD/JD/MD:
Lawyer (clerk)
Doctor (intern)
Most really
For those without a college degree:
Entrepreneur can, but there is a good deal of risk... most do not make $50K for a couple of hard years.
Drug Dealer
Good luck with that.

Colorado School of Mines places B.S. oil and gas engineers in jobs paying $60,000. The job descriptions look pretty interesting too.

Engineering, with a Bachelors.
If you don't have a degree, maintenance mechanics can make that with overtime.
