Chinese use the same keyboard as westerners because Chinese characters can be romanized into phonetic symbols called pinyin and be rendered by hitting the keys representing the alphabets. For example, the sound of the Chinese character 天 (sky) is "tien". We can just type t-i-e-n and Chinese characters of the same sound (i.e. homophones) will be shown on screen for us to choose.

Or alternatively, a Chinese character can be decomposed into simpler strokes, each represented by a key on the convention keyboard. One hits the right key in the right order, the character will come out. For example, the Chinese character 田 (field) is represented by the 'w' key while the character 四 (four) is represented by the 'w' key, followed by the 'c' key.

Um, the Chinese and Korean keyboards have roughly the same number of keys we do. I don't know about Japanese, but I'm sure its not complicated to them, because they have a lot of people in the technology field there.
