No question Undertaker vs mankind. it's true. it's true it's true. This match was 100 percent legit. Mankind had internal injuries and still finished the match.

Probably Bret and Owen Hart at Summerslam 94 if you literally limit it to stell cage matches. If you include Hell in a Cells, then Shawn Michaels vs The Undertaker at Badd Blood would be my pick.
That said, I've heard very good things about Magnum T.A. vs Tully Blanchard from Starrcade 85 but I've just never seen it.

Armageddon 6 man Hell in a Cell match. which was Kurt angle vs. rakishi vs. undertaker vs the rock vs. HHH vs. someone else. the most greatest part of that match was when rakish got choke slammed by the undertaker off the top of the cell in to a dumper truck full of paper. the only great match that mick Foley ever made when he was the co missioner. the cage match out of the film ready to rumble was great it was 3 cages on top of each other in a kind of pyramid shape it and had chairs and other weapons tied to it and at the very top the belt was hanging from the roof. it was great to see the star of the film low blowing DDP at the very top and body slamming him through all 3 cages to the bottom, of course if it were a real match it would kill you, too bad. lol

The best Cage match was A ThunderDome Match back when WCW was NWA. It was Sting Ric Flair vs. Terry Funk and Great Muta. The gage was electrified at the top so you couldnt climb all the way. The only way to win was to have you corner man throw in the towel.

I saw Hulk Hogan suplex the Big Bossman off the top of the cage on Satuday Nights Main Event many years ago. When I think of steel cage matches, though there have been better ones, it is the one I think of only because you never saw things like that before. Now you see it all the time. Plus, I like the way the cage looked back then better than it does now.

I'm not sure about the greatest match, but the greatest steel cage moment is when Eddie Guerrero frog splashed John Bradshaw Layfield(JBL) from the top of the cage.
