Yes, I'm aware of the obvious, ta!! But what was the foundation of the saying and why?? What is the significance/connection of the foot of the stairs with surprise/amazement?

I think it is an old English phrase, an expression of surprise or amazement. I am not really sure what the meaning is but it seems used to recover calmness. See below hyperlink for reference:
