Five best anime shows? There is no best or worse. It depends what your likes and dislikes are. There are some classic and new titles that one should not miss in a given genre.
If you were a fan of mahou shoujo, or magic girl, then I'd suggest the cult favorites Sailor Moon and Wedding Peach. I also reccomend Cardcaptor Sakura and Tokyo Mew Mew as well. Most shoujo titles by CLAMP are reguarded as very good. Two obscure titles I personally love are The Man of Many Faces and Wish. Warning is, all mahou shoujo have similarities between them. Lots of magic, fighting in costumes, magic items...that's just the genre for you.
Then again, you could be interested in shounen anime. We're talking Yu Yu Hakusho, Dragon Ball Z, Prince of Tennis, etc. I'd stick away from anything, though, that became popular in America. This includes Naruto and Yuugioh! due to heavy Americanization, poor character voice choices, etc. I usually shoot for getting copies in Japanese with English subtitles. Especially with shounen.
You've also got horror. My favorites are Le Portrait de Petite Cossette and Petshop of Horrors. But there are many bloody, scary anime out there that are being dubbed at this very second.
There's action like Cowboy Bebop, Outlaw Star, Ghost in the Shell. There's also comedy. Di Gi Charat and Azumanga Daioh are popular. We have animes that are like mysteries like Meitantei Conan. We even have romance based animes like Maison Ikkoku, Gravitation, and His and Her Circumstances.
There is no best anime. And it is impossible to watch them all. Read up on random titles you hear about. That's how I fell in love with my favorites.

since everyone perfers different things, there is no real best 5 anime, but i'll list my favorite five (not in order)....
1. Record of Lodoss War (OVA and TV series)
2. Elfen Lied
3. Twelve Kingdoms
4. Planetes
5. FLCL
and, no, i didn't forget naruto, inuyasha, and FMA. they're just so overplayed. blah. they're not bad, but not really great either (i know i'm gonna get shot for saying that).
