lemons are yellow so that they show up better/better seen on the ground so that other animals/creatures can pick it up, eat it, then spread the seeds to other areas of the world where the seeds will produce more lemons.
the skin of the lemons absorb the blue color, leaving only the red and green to be reflected (which makes the yellow color)
