The above definition of a "ply" is correct...it's one move by one player... when both players make a move, that's considered a "Move"... a "ply" is half a move.
The above answer describes a few "Chess Variants", which are chess games with slightly (or drastically) different rules than standard chess.
You asked about a "variation", and that has it's own meaning when it comes to chess:
The term variation can mean different things, depending on which phase of the game we are talking about.
* An opening variation usually means a specific sequence or line in the opening. It does not necessarily mean an alternate line of play unless we consider that all openings start from the initial position.
* A variation in another phase of the game generally means an alternate line of play (used in analysis of a game).

Chess Variations
Circular Chess
The rules are all the same, except the board bends around and makes a circle. If you are actually going to make a separate circular board, it would have 8 "spokes" consisting of 8 spaces each. It would also be helpful to draw in lines showing diagonal movement.
If you would rather play it on a normal square chess board, play is normal except that pieces can move off the side of the board and onto the other side (but only the sides of the board-not the front or back.)
Hack-and-slash Chess
Instead of pawns, each side has 8 queens on the second rank. Otherwise, rules are the same, but you don't need to worry about en passant or pawn promotion.
Promotion Chess
Whenever a piece, other than the King, captures another piece, it becomes the piece it captured. This works both ways- whether it promotes or demotes the piece. This only works well if you've got a few extra sets of pieces.
Blind Chess
This requires either a third person or some network computer programming. It is played on two separate boards. Pieces move like normal, but you cannot see the other person's pieces. Should an opponent's piece be in the way of a move, the opponent's piece is taken, and the third person places the attacker's piece on the space it would normally be. The third person also informs the player in check if he is in check (but not the checking player)
Metronome Chess
Find a metronome and set it to its slowest possible speed -- between 25 and 40 beats per minute. If you don't make a move by the time the metronome ticks, you forfeit your turn. In this variation, don't call "Check" and "Checkmate," just capture the king in order to win.
