Symbolic of the different masks people put on when facing the world
Maybe she puts up a front when dealing with outsiders or with Father Mckenzie, but when she's alone she puts the mask away and is herself again.

They're referring to the fake look of happiness people put on while greeting people who visit to hide their sadness from being lonely.
She kept OTHER peoples faces in a jar by the door because she was secretly a serial killer who liked to save peoples faces! EEEWWWWWWWWW!!!!

If you go on the net and look up 'PAUL IS DEAD' there's probably some kind of explanation there...to do with Paul having been killed years ago.....it's all a load of toss but it is interesting reading....
