I love elephants too. I have a collection, but don't actively add to it- no room! LOL
I also have collections of:
Salt and Pepper Shakers
Harry Potter action figures
Christmas Water Globes
Christmas ornaments collections
Musical instruments
Rudolph The Red-Nosed Reindeer characters
Ceramics that I've painted myself
Cross ornaments
Disney Princess Dolls (from Brass Key)
I also have other dolls, but there are almost 20 of the ones from Brass Key that I think they have their own separate category. I no longer add to these collections either because of space issues, but when I finally have my own house...watch out!

I have a collection of over 600 Patrick Roy hockey cards. He's a goalie that just retired a few years ago. I'm trying to get them all... but I'll be doing this til I'm dead, cuz he has several thousand!!

house plants and hotwheels cars! I didn't plan it that way, I just had a few, and people decided I like them, so it became the easy gift. now I'm overrun! LOL
