the one in the car is 195 and it runs a little hot going up hills, and what temp will the cooling fan come on?

195 is what most cars use , the fan should kick on about 210

This thermostat included in three way valve to direc cooling water from engine back to engine again (closed circuit) until water temperature becmes 95 deg. celsius , then it closes this circuit and direct flow to radiator gradually uptil allwater temp. becomes 95 deg. c.
If water temp. becomes higher ,another thermostat installed in radiator will cut-in (closes electric circuit ),then cooling fan come on until water temp. cool down , then cut-out ( fan come off ) . The radiator thermostat range varies ,you can select low tmp. 75 deg.c if you live in hot country . I hope this answer is helpfull for you .
