Someone once told me it's the bottom of your feet. But, there's this biodismorphic figurine someone once made. It's hands,lips,feet,tongue,eyes and head are too big in proportion to everything else. The figurine represents the proportion of our nevous systems' involvement to the various body parts.

See, anyone can say, that 'that' one is the most sensitive organ. But, if you want scientific answer (as Trailbalzer mentioned), we have to define on which scale we are comparing. Comparing eye and ear on the same scale is not scientific, since they respond to different 'senses'. One have to compare the concentration/intensities of the source of sense. For eye there is light intensity, for nose there is concentration of the smelling substance in air at the point near to nose. So you see comparing those are not too easy.
But by 'sensitive' if you mean most 'vulnerable (to touch)' exposed organ(there are lots of organ inside which are more vulnerable), then the answer may be eye balls.

Surface of cornea,
conjunctiva,
entrance of nostril,
mucosa of lips,
external ear,
tip of urethra ,
clitoris,
vagina and
opening of anus
in that order. They protect the body from external stimulus(aggression biologically)

I would have to say the Kidneys.
They are effected by medications.
