How do I find a hitch and 5- bike rack that will be compatible with Honda CRV with spare tire on the back?

You will more than likely need to use an extension or an adapter to gain the clearance you will need to get past the spare tire. Be careful how long you get it, as your weight rating will decrease. Example; a 2000 lb hitch will loose approx. 1/3 of the weight rating with a 12" extension.
