Especially those rocky trails that lead up to high mountains. The rocks are big and yet fit nicely in the trail like steps, are they man made or natural?

both.
I do a lot of hiking in national parks.. Yosemite, Death Valley, Joshua Tree, etc..
Most of the major trails have pretty interesting historic origins .. used by old mining companies, used as shortcuts due to their natural topography, most trails located in ravines/canyons are washes cut by water..
whatever the case may be.. nature may have started them, but man found these trails.. used them.. and they become favorites from that point on.
