Publish yourself, or trust someone else. You must be sure you can trust the publisher.. its not easy to find a good publisher, or build a trust relationship. I'd recommend a few good books, but I dont know any. You might try reading a "dummies" or "complete idiots guide' book, those are really awesome.
Either you own it, someone else does, or both. How do you feel about that? The publisher has some ownership and a majority of the profit from the sales because they absorb the risk and put in a significant initial investment. I dont know how I would feel about someone owning something like that of mine.
You might be able to copyright, and publish the whole thing yourself.

You can try contacting a publisher, but the odds of finding one that's interested in something like this are astronomical. If you or your wife were famous then you might have a shot, but normal daily notes from average people just aren't the kind of thing that publishers are looking for. They're looking for the literary equivalent of the summer blockbuster. They want writing with plot and characterization and action and adventure. Even published authors with proven track records are having problems getting published these days.
You might have better luck if you have an agent, but it really doesn't seem like something that has any chance of being published without some kind of 'hook'.
Watch out for vanity publishers - they do publish your work, but you pay them ahead of time and usually you end up owing them more money.

There has been some petty good ideas stated already. There are a few books out there that list all the publishers in the US and will give hints on how to send out your work or manuscript. You might want to buy one of these. They are only 10 or 20 dollars and can be found in the creative writing section of any book store.
If you live near a college you might check to see if they have a creative writing program and talk to the director of the program. They may be able to put you in the write direction. At least, they might put you in touch with a local agent and they can tell you whether or not your idea has any merit.
I like the idea regardless of what anyone says. The simple fact of the matter is that we are currently obessessed with the lives of others. Just look at all the reality TV shows now a days. Do not let anyone discourage you and just have faith in yourself. The idea reminds of something Mitch Albom would do. Let us know if it works out for ya =)

You have repeated this posting many times and have been reported. Again, I will tell you as someone with years in the journalism and publishing arena, you are barking up the wrong tree! Unless you are just so utterly egotistical and are just desperate to see your name in print (although your wife is the author), a bunch of little notes your wife wrote you DO NOT MAKE FASCINATING READING! Vanity publishers will probably jump at this because of course, YOU pay THEM money to publish, as you do in any self-publishing venture, including the POD. It's ALL vanity publishing. A legitimate publisher wouldn't touch this tripe with a ten foot pole. And besides, these notes are personal between you and your wife, so she too must be CRAVING attention and some little shred of recognition. You cannot send in a manuscript or just a bunch of "little notes" and expect someone to wade through them and put them in book form. This takes tons of work and time, and again, it isn't viable. But apparently you are hell bent to do this, so be my guest, spend your hard-earned money, and give some self-publisher or whomever a few hundred bucks. Then (you dip wad) you will be stuck with a bunch of books that are filled with tripe and you will be expected to market them yourself. Lot's of luck, as people are NOT GOING TO PAY YOU to read your wife's little love notes to you! You need a reality check and fast, or perhaps you are smoking some good weed. Get a life!

Sounds like a nice wife.
Well, my opinion is that you have 2 options.
1: Pay a vanity press like www.lulu.com to put your letters into a book form. Then you can market, sell and promote them yourself-- or not. If you want to organzie the letters into a book for your own keepsake, that's different. (do not use Publish America- they are bad news)
2. Type all the letters into a proper manuscript format, research publishers and/or agents who handle your type of work and start submitting query letters. I would assume that most if not all publishers/agents will expect to see your work in a proper manuscript format, rather than a bundle of letters-- but the originals could be photocopied or included in some way.
