I assume you mean cells of the same organism. They all start out with the same DNA (genes) but during 'development' the genes get regulated differently depending on the position of the cell in the embryo. Most genes are turned on during development in some cells but stay off in others. For example, hemoglobin's protein part (globin) is coded by genes that are turned on only in cells destined to be red blood cells. Collagen protein is produced by many kinds of cells, particularly the fibroblasts that are in the connective tissues throughout the body, but its genes are turned off in red blood cells. Each cell has particular genes on and off, depending on the type. It's all regulated by gradients of regulatory proteins that are laid down within the egg during egg development.

Cells are different in various ways, they can be morphologically different, they cell membrane composition may be different, their organelles can vary in number and some cells have organelles that others have not.
We have many cells types, because many of them accomplish many different functions, for this reason they have to be different.
For example red blood cells, are different, they lack nucleus, and their shape is extremely different, because their main function is to carry oxygen.

For example think in a neuron, they do not transport oxygen and their main function is to transport signals from and to the brain, they have a very large tail (axon) while their body has many projections, and the are covered with a compound called myelin to help in the transport of electrical signals through the axon.
Now you see?? differences in shape are related to different functions

It happens during development of the embryos as you were already told. The process -and the key word you have top search for- is called Cell Differentiation

cells deffer in structure, thats why they become different..
to make it more simple:plant cells have cellulose wall so plant cells are stronger, plant cells also differ among them selves becuse there are diferent kinds of cell walls for plants..BUT animal cell don't have strong walls 'case they don't have strong tructure..
