I think that most Americans are just unfamiliar with the subtle differences in characteristics between various Asian peoples and so, when looking for a nationality to use in description, pick one they know. It may be Chinese, or Japanese, or something else. Usually, I don't think it's meant to be racist. I've noticed that Asian people sometimes take offense when you guess their nationality incorrectly, so I avoid this. Having known quite a few Asians of different nationalities, I can sometimes pick up on the differences in mannerism, appearance, accent (if any) and such that might indicate their nationality. Keep in mind, though, that this is difficult for Americans. It's like a Korean trying to tell the difference between a Scot, a German and a French (which could be hard also for an American).

Also, I think that Americans don't share the biases that some Asians have towards other Asians. For instance, I have a Japanese friend who was dating a Chinese girl, which his parents found to be inproper. Obviously, his parents would be insulted if I thought them to be Chinese, as they seem to have a problem with Chinese. For me, though, such a mistake would be innocent, as I have no prejudice and mean no harm in guessing a person's nationality.

Point being... There certainly are some anti-Asian racist Americans, but I think it's generally an innocent, ignorant mistake to incorrectly assume a non-Chinese Asian is Chinese.

United States is really a PREJUDICE country! .From annihilation of American Indians; Black African slavery; Irish; Italian & chinese unfair labor. Just in this day of age, most have realized that no matter how you look like, all are equal with their mind , body & the color of their blood. But some, because of their ignorance and lack of education, they still have the traits of a below intellectual level. You move on, and achieve what this other people cannot achieve.

I b' white, ye can't tel if I b' Irish,french, German, I am most often guessed t' b' irish or German, although I b' mostly French?
Also I can distingish to a pretty good degree by physical features the sub-cultures of th' Asian population, an' the food too! An' I have a great fondness o' Asian food, an' not all Egg-roll are created equal, or are they made the same by any one person, but of course I love em all!!
Now I must admit thar b' a time I b' lil confused and dazed......I b' workin in a hosp. in Southern California, (th' Pirates day job b' a Psych. nurse,) an ' I came in t' work one morn' an recieved a in all physical appearances a very beautiful African-American young lady, in th' units seculsion room. She had not communicated with any staff sense her arrival t' th' hosp. assumed psychosis? She had been combative through out th' night. I an' me crew went in to assess her, she was total unresponsive to our questions. Appeared more scared than anything, an my crew b' multicultural, was me white self, Joy a Phillipino nurse, Moon a Korean tech, and big biker Dan we nar ever b' sure what he was?
Late as always Miss Jenny arrived in her whirl wind fashion, babbling in her Vietnamese/English chatter, not wantin' increased stimulation t' excite our patient........we almost stopped her from entering the room, that is until for the first time a notable response brighten our patients face, and she responded verbally in her native langage, an' she b' Amerasian!
Pirates calmed th' sea's, o' should I b' rumbled th' sea's, as th' denouced "Villians of all nations" by weighty authorities in every nation(as describe by Author Marcus Rediker) but heros to many common folk in the eightenth century an' many more since. They created life under the black flag of death, liberty in a world of despotim, an' equality where hierarchacy dwelled. Maintaining a multinational social order and culture of all crossdressing women, people of color, and "outcast" of all nations" challenged and subvented race, class, gender an' nationality, posing a radical democratic challenge to the society they left behind. Dared to play rebellious Villains on a floating international stage. An b' hung by th' authorities for it! But the Pirate Triumphed in the end winning the battle for popular imagination in their day and in ours!!
To answer your question, because the majority of people an the US population have been exposed to mostly the Chineses subculture of the Asian Population an' tend to do this not out malais, ignorance, but out of most exposure to. I know this by being reared in the upper midwest. The city I grew up in had only one family of Asian's until I was 16 or 17 an they where Chineses.
In later years a Thi family moved there, an some Veitnam vets married an' brought their wives back home. And it is true the grouping of subcultures identified as Oriental do look simular physically. As do middle-eastern Asians.

Because most of us are not educated as to the differences in Asian societies. Just as most Asians think of all Americans as "white" or "black."
