The color (and name) yellow was selected by John Hertz as the result of a survey by the University of Chicago which indicated it was the easiest color to spot. The original Yellow Cab Company based in Chicago, Illinois is one of the largest taxicab companies still in existence.

Because that is the color people think of when you say Taxi Cab they think of a yellow car/van

Probably to make them easy to spot in high traffic areas like big cities. The ones here in my town (not all that big) are light blue.
