I didn't read Don Quixote, but I studied Life of Pi in an English class a few years ago. I think I remember the prof talking about a relationship between the two. I haven't done a "google" on this, but if a relationship exists, I'm sure you can find one.

POSSIBLE SPOILERS
The big thing about L.O.P. is that you aren't sure if it's imagination or reality. Was the tiger a tiger? Or was it a person from the ship? That could be a similar theme in Don-- that is, how do you know what is real and what is the character's imagination.

Don Quixote goes on an endless quest to save damsels in distress. The life of Pi goes around and around in circles. Quixote's mind makes him go around and around because his quest of chivalry never ends until his death.
