How much overlap between sheets? Any caulking or sealing between sheets? What fasteners to use? Any other tips, hints, info. Thanks

You really did not mention what style panels you have. The first respondents assumed you were using "wavy corrugated" galvanized panels. There are many different styles, if you are using "R" panel, (most common these days), you overlap one high. The same applies for wavy corrugated. Use "strip dope", or "roll caulk" on the high of the sheet being overlapped for a watertight seal, on a deck this may not be important. If your sheets are galvanized, or galvalume you want "UC-2 9x1.25 screws. I am assuming you are screwing into wood. You will also need 12x.75 stitch screws at the top and bottom of the high that overlaps, and every two feet in between.

1st The top sht must overlap the bottom sheet by a least 2 inches or 50mm. If your sht's are side by side use some silicon on the overlapped section. 2nd. The types of fasteners to use are tech screws which will drill the hole and seal it when installed with a rubber washer beneath the head.

I would overlap at least 2-3 inches...using galvanized screws with rubber washers. You could seal the edges of the sheets but the overlap should take care of any leaking.
