You can dry them, or keep them in the refrigerator, but they won't last as long as drying them will.

Dry them by setting them out in the sun. That is the cheapest and easiest way. I like canning them in vinegar and brine. You can find many good canning recipes. My first attempt at canning was over 5 years ago and I canned peppers like you have. I still have jars on my shelf of those original peppers and they are still good. Or you could go with freezing some for cooking. That takes up energy to maintain them and they have a limited life span in the freezer but it is convienient.

Of course you could give me some peppers ;-> My peppers did terribly this year. I have a decent crop of bird peppers that I will dry and grind into powder. But my jalapenos, habineros, banana, carmen, and bell peppers fizzeled out from adverse weather conditions. I was also trying 2 varieties of south american peppers that you can't find in the states (tiger tooth and weri). They, likewise, never took off. So you see, I am having a pepper crisis...please, can you spare a pepper for a poor little pepper-head?

Use a needle and thread to string them together, and dry them in the kitchen window. They are decorative also.
