Talk to the dean of your department about your concerns and note all the occurences of racism. Hopefully, if you do this, she'll know that someone is watching her and her tactics. Also, if you speak to her boss (the dean of the department) and she gives you a bad grade, you'll have some documentation and some back up so you can either challenge the grade. Or she'll be so scared, she'll have to give you the grade you deserve!

Go to your Dean, and even higher up if necessary. Document as much as you can. Find her mailbox (in the office). Write an anonymous note, as if from a fellow teacher, "It has come to my attention of complaints of racism in your classes..." or something along those lines.
Or, make light of it. Try to think of things to say, that addresses her prejudice. Maybe something like, "well, everyone knows that we asians are inscrutable...and besides, we all look alike....!" Maybe getting others in the class laughing with you, against her, would get her to ease up a bit, and at least not endanger your grade.
