Older vests (older than 1975) are made from metal (steel or titanium), ceramic or polyethylene plates inside the cloth vests.
Modern upgrades (since 1975) are Kevlar and other similar woven materials being used. If you browse the links I've provided you will get some good information.

well for starters , as many have already said it , bullet proof jackets aren't made of metal itself!! they are in fact made of reinforced plastics or glass, which is nothing but glass or plastic taken in the form of thin,flat sheets and various layers bound together with some kind of rexin (adhesive). this process gives the plastic/glass a good thickness, and more importantly, the ability to stay unbreakable and durable. this is the bullet proof jacket for u :D

Actually, no metal. It is a synthetic substance called Kevlar. And Kevlar is the same thing as spider webs, or very close to that. (And you thought spiders have no purpose!). But it is man-made, as it is not practical to go around collecting spider webs. So chemists have learned how to make their own spider webs.
