Wash it first.Then cut it up the way you like. Place in a pan and cover it with water.Bring it to a boil and turn the heat off. Allow to cool somewhat and place (serving sizes) into a plastic freezer bag. Tie an place in your freezer. When I do this, I try to lay each package flat until they freeze. Then I can go back and line them up ,kinda like books, in the freezer. Its really the simplest way to store any vegetables. In south Georgia, they call this "putting up". I run mine through a shredder and drain it so not so much juice it has alot of water in it.. then put it in freezer bags and in to the freezer.. generally use quart size bags.. and use for breads or in cakes so you don't need a whole lot at a time..
you can also dry it.. takes up less space

You can also shred it, stick it in a ziploc and freeze it. Shredding it ahead of time makes it easier to use in cookies and bread. It gets mushy after it's been frozen.

I just cut mine upand put into plastic freezer bags. Works fine for me.
