Your brain will function as long as it has blood circulating in it. So if you have your head chopped off you only have a few seconds, I've read that you can actually see while your head is rolling off.

Perhaps 20 seconds at the most. Unconsciousness and death will occur quite rapidly because oxygenated blood can no longer circulate through the brain. (That's assuming the trauma of decapitation wasn't sufficient enough to induce unconsciousness and death in the first instance.)
However, brain death may take much, much longer.

interesting question. I don't know. I know if a chicken looses it's head it will run around the yard for a while, but it's only a reflex. I think it's brain dead when detached though.

brain can still function because of brain cells. maybe you're asking if you can still run away with your feet. see a live chicken beheaded. the chicken can still fly away.
