That depends on the fish you want to tell which is which. Fish are either Livebearers or Egg Layers. Livebearers are easy because the males have a gonopodium, which is a modified anal fin. It is pointed towards the tail.

Egg Layers can be easy or impossible, and you need to either find it in a book, or be an expert breeder. A book will tell you which fish can be sexed and which ones are near impossible.

Relatively simple to identify all the live bearers:IE. mollies, guppies, swords and plates. The female has 3 triangle fins on the underside of the body. The male has a triangle on the front underside and and an elongated fin directly behind it.
Male Betta's have longer fins. Most grams have a larger brighter colored skirt trim. In African coachloads you can tell the opposite sex by color.

Pull up a chair and watch them, the male will approach the female and the female will tell him to leave me alone or "Get a Life" or just ignore him, then the male will go to the furthest part of the tank and wonder what the hell did he say to deserve that!

It depends on what fish. Sometimes you can tell by the fin placement, or the size or the colour differences or how ornate they are, males tending to be more ornate because they need to 'show off' to attract females. It really varies between fish species.
