If CIder rocks your cookies go for it - - - I prefer a tangy chutney or barbeque sauce. CIDER is great for pork! Enjoy.

Yes marinating does not just add to the taste but also acts to break down the hard fibre so meat like Pork and beef greatly benefit.
Cider or wine is very beneficial as are some fruits such as pineapple (on gammon) and lemons or limes in stews (Moroccan style).

i would put Cider , mustard (there are all kind of nice tasting ones) add a bit of oil,and some herbs.Soak over night if you can ,but if you cant , Soak 2 hour.

Any marinade that contains acid, alcohol or salt should not be used for very long, because it will chemically "cook" or denature the food in it. Marinate food in these marinades for less than 4 hours.
