Dear _____________

I would like to sincerely thank you for giving me the opportunity to work for you. As you know things have not been easy for me with the passing on of my father and with my studies.

You have made difference in my life, especially since my father died and I am grateful for the chance you have given me and the trust in me to do my job to the best of my ability.

I enjoy my work and am happy to be working for you, I would also like you to please consider the renewal of my job so I can continue to be in your employment.

Thank you for taking the time to read my letter.

Yours sincerely

Just go ahead and write what comes to your mind and be sincere about your comments. Make sure that you do not make it appear like you are sucking up to him.
The best show of gratefulness is to perform your job with excellent results. Put in more effort to show him that he has made the right choice and not regret his decision to hire you.
The best letters in the world will not mean anything to him if you do not follow it up with genuine good performance. Give him more than what he expects of you! Wouldn't this be better than a well-composed letter? In the letter, all you need is to be sincere.
