It is a chemical change since the Hydrogen attacks the double bonds between carbons in the oil, and can not be reversed.
If you are referring to a vegetable oil, hydrogenation will change the fat from liquid to solid, from a saturated fat to a partially saturated fat (Trans fat), which was a great idea for the food industry, but terrible for people' s health.

It's a chemical change because you are adding extra hydrogen atoms to the oil and therefore making a change that cannot be reversed without altering the strucutre of the oil.

A physical change describes a change in the state of a compound. (ie going from a solid to liquid to gas.
A chemical change descirbes a change in the formula of the compound. Hydrogenation of an oil reduces double or tripple bonds with H atoms. Therefore the molecular formula of the comound chaneges and it is a chemical change.

Yes dear its a chemical chang , as whole formula is changed during hydrogenation.By hydrogenation one bond breaks between carbon-carbonand two new bonds are formed between hydrogen and carbons.As one bond is formed between one carbon and second bond is formed between second carbon and a second hydrogen atom. The process is also called hydrogenation of olifens.And also as saturation of unsaturated compounds. In this process the Nickle metal is used as a catalyst.
