The best dragonball fights have to be:
1. Goku vs. Frieza (frieza saga) - Super Saiyan Goku.
2. Goku vs. Vegita (saiyan saga) - The best animated fight sequence i'd ever seen.
3. Gotenks vs. Super Majin Buu (fusion saga) - Animated fighting comedy at it's best.

Wow, good question. Anytime Vegeta and Goku fight it's just amazing to watch. So much detail, so much animosity, yet they never kill each other! That one fight with Freeza was cool and so was the Capt. Ginyu one and the end with the frog. Classic. That one mini-movie with Trunk's alternate future, those are really cool fight scenes too.
I liked DBZ a lot better than GT, the Freeza saga was my favorite, it just felt like there was so much more on the line than any other one.

hmm.. I would have to say the Freza fight on namick in DBZ and I would think GT was one of the best series, so I would say all of the battles were really cool. I only have seen GT in japaniese in subtitles, but still it was one of the best sagas out there DBZ wise.
