1. I don't have to ask them for anything, they anticipate my needs (including but not limited to: drink refills, steak knives, napkins, etc.)
2. They know about every item on the menu; it's price, it's ingredients, it's size.
3. They listen to my order completely and make absolutely NO assumptions (giving me something without asking me, like automatically giving ranch dressing on a salad, etc.).
4. They NEVER address me, or any other guest, as: sweetie, honey, sweet thing, missy, etc.
5. If I do have a problem, they don't complain about another person not doing their job. They FIX the problem or address the manager immediately.
6. I never see them on the phone. The ONLY exception is in restaurants that take "to-go" orders, and they should ONLY be on the phone to take the order.
7. They do not eat or drink where I can see them.
8. They do not smoke where I can see them.
9. They do not bad mouth any other employee (or ANY person) where I can hear it. I am there to enjoy the food. If I wanted drama then I'd be watching a soap opera.

In a server I look for...

attentiveness to their customers regardless of their business levels...
a lot of restaurants tend to be full at peak days/hours and it is the service at the difficult times that defines a good waiter(ess).
When the place is pretty busy and yet the waiter(ess) comes across as being attentive to customers.

Tips...
Drinks, condiments, bread...don't push desserts, and bring the cheque soon after. They will definitely get a VERY GOOD TIP from myself. Even above the customary 20%.

You definitely want to make sure the waiter is polite and treats you with courtesy. Some waitresses and waiters don't attend you if you have children with you. Some are racists. Oh yeah, and if you don't think they trated you like royalty-NO TIP!

If any appetizers, they have to come out before the meal, of course the simple stuff like refill the tea, water, etc. Pay attention to when the customers might be done - offer a box for leftovers, get the bill (check) out to us before we have to wait!!! Noone want's to wait for their bill! That always seems to be my biggest problem - and don't push dessert!

I want someone who is attentive me, makes suggestions based on knowledge(not up-selling), anticipates my needs, is polite and knows when to interrupt and when not to.

If I have stopped eating and I'm looking around for you, come to the table. Don't assume that just because I have my food I don't need anything else.
