over a puddle for a woman to walk on, what would happen to the coat after?

Bear in mind that sewers weren't popular and the streets were filled with filth. So really...what did the man then do with the coat?

It wasn't a general custom; that's why Sir Walter Raleigh was regarded as highly chivalrous when he did that for Queen Elizabeth. I'm inclined to think the particular streets that Good Queen Bess trod most often weren't filled with sewage. In fact, I never heard that Sir Walter's famous beau geste took place on an actual street. But if it was as you describe, I imagine he saw that the coat pockets were empty, and then left it for the peasants.

It was actually a cloak that was used for this kind of behaviour,to keep milady from soiling her shoes and clothes with wet mud.A number of different people allegedly performed this feat for various ladies and even a king or two got the same treatment.
Obviously anyone in such distinguished company would not do their own washing. It is a pretty safe bet that the cloak would have been laundered by a servant. The gallant gentleman would probably simply take the servants cloak to keep the rain off until the laundry came back. The servants would then go without.Just like they do now.

Assuming that ever really happened and isn't just a very early 'urban myth', I'm guessing they had to just throw the coat away.
If it were the queen that the coat was laid down for, I'm sure the coatless man was rewarded handsomely enough to buy another.

I think that was just a one-time story about Sir Walter Raleigh and Queen Elizabeth. Even if it was true, Raleigh was rich enough to afford another coat!

He deftly folds it so that the filthy side is inside, and carries it home to his mother so she can wash it AGAIN.
