This is kind of a cool question because I'd never even heard of this before.
According to thefreedictionary.com, it's "The shank bone, or great bone above the fetlock, in the fore and hind legs of the horse and allied animals, corresponding to the middle metacarpal or metatarsal bone of most mammals."
Other references say "horse and allied animals", though, so probably things like zebras and mules have it too.

Several hoofed animals have a cannon bone but I'm guessing you mean the horse because of the significance of using them in agriculture, show, breeding and racing. The cannon bone(3rd metacarpus) is closest to the hoof.

The cannon bone belongs to the equine species and is the third metacarpal bone, above the fetlock joint. Or as the book calls it:
"The large third metacarpal (informally the cannon or shin bone) provides the major support of the body weight."

i belive the horse is the only animal with a cannon bone. it is locatted in thier leg from the middle down. it is the main bones and it is very strong.
