Flies frequently and suddenly change direction to dodge flying predators like bats, birds, and dragonflies. Such creatures are very adept at tracking the motion of their prey and predicting where they will be when they swoop in. Hence, the fly's behavior evolved so as to be unpredictable and dodgy. Since flies cannot always spot the predator before it's too late, they just dodge around all the time. Another thing flies do is circle stuff they find interesting to study it (in their own limited way) for a good place and/or time to land. Combine the two motions and you naturally get a (sort of) polygon. That said, I'm unaware that the polygon is any particular one, like a hexagon. That's a very interesting observation. I'll keep my eye out.
Don't be put off by responders who belittle your observations. Neurologically, insects are incredibly simple, yet their behavior is complex enough to exhibit elaborate survival strategies. The combination makes them both comprehensible and instructive to evolutionary biologists, even at a molecular level in one study of cockroach danger avoidance behavior. The belittlers are either ignorant of this, too myopically focused on their own small concerns to care, or (more likely) both.

Forget flies man! You gotta watch out for them Godamned bats!! Poor fool.. you'll see them soon enough yourself..
Good question.. maybe its a short memory thing like Goldfish. They think hmm.. what shall I do today? I know lets eat poo! so they buzz off to eat poo.. and then forget! And for amoment they loose track and think hmm.. what shall I do? Eat poo! so off they go again.. and so forth.. hence to sudden jolts in they're trajectory that resembles hexagons or so forth.
Amusingly you could if you knew they're velocity work out the length of they're memory span! LOL!
I'm sure theres a better reason.. the moon on eI read sounde interesting but I'm not sure if that applies to flies. Also flies reflexs are VERY sharp.. through theyre eyes the see the world in slow motion.. thats why swatting them is a bit of a sport in some bored places... maybe they're refleces out accelerate thought and when they're brain (do they have one??) catches up... they alter trajectory.. All speculatory guess work.
In short.. dunno.
Wow.. looking at my spelling here I think I must be pissed as a fly!.. hmm.. time for sleeep I think.

because the eye of a fly is made up of hexagon shaped panels. so to them, they are flying in a circle, when in fact, they are not

Moths use the moon to fly. They try to keep it in one part of their eye in order to fly in a straight line. When a brighter light source appears, such as a light bulb, it distorts where the moon is, in relation to their eye. They then become confused, and fly in circles, trying to locate the moon, in order to fly in a straight line. I believe that it is the same principle for flies, but it is the shape of their eyes that makes them fly differently to moths.

I don't know, but maybe their wings get tired. Try walking in circles, and walking in hexagons, and you'll probably find that hexagons are easier on the legs...

you must have been really bored to have noticed that. the 1st thing I do when I see a fly (in my home) is whack it!!! cos most fly sprays make them suffer for a bit first, n that make me feel sorry for them but not enough to let them live tho LOL they carry lots of germs from dog poop n all sorts

I'm amazed so many people watch the flight path of flies!
Personally I just try to get them out of the room or kill them to stop them spreading more germs.
