There's a free, online software utility at http://www.email-encoder.com which will do the job for you.

It creates a very small amount of code, which is neat.

I use a cgi email form on my websites, though anything I can think of I'm sure the harvesters can work around.
Just don't put your email address in it's original format anywhere on a published web page.

The only way I know of it to create a graphic with the email address. Anything that is clickable has to have the address in the html and can be found. you could always create a javascript that runs when the graphic is clicked and it creates the link from separate pieces.
a="jo" b="e@" c="xxx." d="com". z="mailto:"&a&b&c&d or something like that.

A simple method is to fill it with 'fake' alphanumarics.

IE: my e-mail Addy is
z31b13r1d1331@1ya1h1oo1.1co1.1uk1

Remove all the '1's

You dont have to use the number '1', you can use any no./letter/symbol. As long as you clearly tell the audience how to decrypt the address everything will be fine. The harvester will gain an invalid adress.
