Check out Beserk. That is bloody, violent, gory anime.

Vampire Hunter D (and its sequel) are also good. Just be careful not to confuse it with it's Americanized counterpart, Van Helsing. D beats Van Helsing's @$$ anyday. ^_^

There is also Tokyo Babylon, Petshop of Horrors, and Princess Monoke. Enjoy!

Bubblegum Crisis.
It deals with the dangers of Artificial Intelligence, and technology
advancing too fast for a society to handle.
Even though it's from the 80's, It's still the benchmark standard which all other Anime is compared to IMHO. Even the
movie Blade Runner was inspired by it.

You're Under Arrest!
It's very well drawn and has some catchy music.

Macross Plus.
Intense action and drama.

Giant Robo.
The Look is unique compared to most anime.
Everything is on a breathtakingly grandiose scale, Including the music and the plot.

Gunbuster.
I never would of thought that time-travel could give me goosebumps.
Every time the main characters go on their "missions",
it involves some sort of time acceleration. Just a couple minutes
on a mission, would mean that years or even decades have past
on earth. When they come home, Everything has changed . Parents are dead, good friends (who were only teenagers before) are now very old or dead, and all that was home has been
reduced to just memories.
It is tragic and heartbreaking to see how much they have
lost in just a span of minutes.
Awesome storytelling!
